Haven't been there but I've looked into it, and here's what my basic research found: Belize is one of the least developed countries in Latin America. If you want a primative experience and/or being in an English-speaking environment is a must, Belize is the way to go. If you want something in the same neighborhood with just enough development to adequately support a tourism and hospitality industry, look into Costa Rica.
Wow, SO wrong! Yes, parts of Belize are very poor and under-developed but there are also major resorts and tourism areas with 4- and 5-star places to stay in. The major industry is probably scuba diving at the 2nd largest barrier reef in the world (also declared a World Heritage Site), followed closely by visiting the Mayan ruins and conservation areas. 40% of the country is now officially protected. You can stay on privately-owned islands (eg; Private Island Belize Resorts, Luxury Island Vacations | Cayo Espanto Resort), in self-catered apartments or backpackers' paradise. You can spend $25 a night or more than $500. It just depends on what you are looking for.
The OP didn't ask about staying at resorts. There are any number of third-world tropical countries with nice resorts. In that regard Belize isn't particularly special. It's what you find once you leave the sheltered resorts that makes the difference. What I've heard of Belize from people who have been there -- and not just the resorts and touristy areas -- is that it's primative and overall a rather gritty place. Again, if that's what the OP wants, and there are some people who do want that on their travels through developing countries, then Belize will fit the bill.
Thank you all for the replies, Drover, this is what my wife and I are looking for, something that is real and in your face, I think we will stay in a hotel but a local one.
Now one other question, My wife is/was a Chinese national, now has an American passport, the question is how will she be received? ie; will we have a problem or not with the locals, I'm thinking not but hey you never know unless you ask, thanks again in advance
Don't forget the wonderful Mayan ruins, tropical rainforests and coral reefs! I'd definitely say go!!!
