When is the least windy time of day for this hill country? Sprinklers are having trouble cause of the wind.

Early morning.....

Good time to water anyways because of low evaporation loss.

Right after sundown and right before sunrise, although any time in the middle of the night usually has lower winds.

Hoffdano's right. Mine are set for 5 AM for those two reasons.

If you want evidence, go here and look down at the windspeed chart by hour:

History | Weather Underground

You can even look at a station in your own neighborhood for VERY localized data.

Back in Atlanta(and even in Columbia), the morning hours were pretty calm, winds picked up during the afternoon and then settled a bit after sunset...all important if you want to be on a tennis court.

However, since moving here four years ago, I've noticed it can be windy any time it darned well pleases . Agree 'somewhat' with the above posts, but there are plenty of 4am Saturday sprinklers just sending water down the block . Seems the Gulf breezes are a pretty consistent factor, only slightly stirred up by the heating of the day. I reckon 2-5am would be the 'normal' calmest times(relatively speaking).

There will be periods of strange calm followed by northwesterly breezes as the front (hopefully) arrives over the next 48 hours or so. It's incredible how different that feels compared to 'normal' here in cen Tex.

Another reason to use sprinklers in the morning if you are in the City of Austin...

We're still under Stage 2 Drought Water Restrictions (yes, really!!) so on your allowed watering day (Saturday for odd street addresses, Sunday for even), you must complete your watering with sprinkler systems by 10am. Portable hose end sprinklers get another shot after 7pm.

And the ticket for a violation, if you happen to earn one, could cost you $721

I watch the wind religiously so I know all the sites that post wind

Here is one that is showing wind for lake pflugerville. There are other wind meters around town. You can just browse around the site to find them. There are also archives which show historical wind.

Here is an example of a wind archive for may 2012
