Bruegger's in Westlake is my go-to, mainly because it's on my way coming or going. Not the "best" per se, but they are boiled and do the trick.

Not bad for a chain.

I'm happy to learn that the best (Wholy) Bagel place in Austin is in my neighborhood. I will try them out tomorrow!

I worked at Brueggers for a summer in HS - yes, they are decent, much like Einsteins. There is now a Brueggers on South Lamar in a storefront next to the Broken Spoke. I can't believe I just wrote that.

Is it possible to explain just what makes NYC style bagels so good? I've heard this a number of times, but I have no idea what that means.

Every bagel I've ever had in TX tastes like cardboard, and no amount of cream cheese could disguise that fact.

I have a cyberfriend from NYC, and she said that she used to go get bagels at the bakery, and would have half the bag of PLAIN bagels eaten before she got home.

They're moist and chewy yet light and fluffy. A toasted NYC bagel will have this nice crispness, yet be totally moist and chewy inside. NYC pizza is similar, but with a well done crisp crust that quickly becomes chewy where it hits the sauce, and the crust isn't too thick.

I liken it to the mastery you see with brisket in Texas. Being able to pull it off at scale with consistency too.
