I can understand that, but Charlotte's scenery doesn't include a beach or mountains while SLC's includes mountains and a lake. Unless you prefer the rolling hills of the Piedmont to the lake and mountains, I'm not sure how Charlotte would win for scenery.
Skylines are nice, but they don't really have much to do with downtown. Some cities with average, subpar, or practically nonexistant skylines have great downtowns. But I do like how the LDS Temple fits in with SLC's skyline.
It's about proximity for me. Every city has lakes and I'm not interested in living in a city in the mountains.
I was just throwing it out that Charlotte had a better skyline, even without that I prefer Charlotte's downtown. I just like the feel.

Probably implying that on an upcoming weekend in Charlotte it's easy to jump in the car and go to either the beach or the mountains and be there within a matter of a few hours. From SLC getting to the beach usually involves getting on a plane or something to the tune an all day 10-12 journey in the car each way.
Economy: SLC consistently is among the lowest unemployment rates in the country. It is remarkably stable.
Schools: SLC
Downtown: SLC. Charlotte for the better skyline but for street level activity downtown, I'd go with Salt Lake
Airport: Tie I guess. Charlotte is busier but SLC closer to downtown
Public Transit: SLC has done a very nice job with its light rail system so I'll go with them.
Scenery: Salt Lake City by a mile. Spectacular setting.
Diversity: tie? SLC has a higher percentage of Hispanics and Asians, Charlotte African Americans.
Food Scene: no idea
Quality of life: SLC features a great location allowing quality city living combined with incredible outdoor recreational activities.
Cost or Living: Charlotte
Where would you rather live: Salt Lake City
Where would you rather Vacation: Salt Lake City
I think having proximity to those places is nice, but the ocean and mountains aren't part of Charlotte's scenery. I should have put "Proximity to other places" up as a criteria though.

Yes, but that's not very common. For most cities, proximity to beaches and mountains can be an asset in terms of nearby recreational assets.
