Been to Memphis once, to a famed BBQ restaurant, probably known more for being a tourist trap than a BBQ mecca. When I ordered ribs, I saw the guy take a pre-packaged-in-film-wrap portion from a cooler, unwrap it, then put it on the grill.

That's not my idea of good BBQ.
That's because you went to the wrong place. Let me guess: You either went to Rendezvous or Corky's?
No kidding. DC does things well in food. BBQ isn't one of them. That NC style pulled pork BBQ turns me off immediately and I'd rather go to Chipotle once I see it. Also, it's amazing that I have yet to go to Famous Dave's. Wonder if I'm missing something with that place.
Eastern NC style BBQ is very good, but it's very hard to duplicate especially in volume....sort of like New Yorkers complaining about bagels and pizza outside of NYC metro.
I think BBQ is much more regional than related to a state since it varies from Dallas to Austin, Charlotte to Raleigh, Knoxville to Memphis. You'll find the best BBQ in the south, all over the south and depending on region is what you'll get. I traveled a lot and in my opinion, it's very hard to reproduce many of the specialty styles like Eastern NC BBQ because it's very much a sauced based BBQ and can dry out quick. You can't even get it up to standards in Raleigh, much less DC.

GA doesn't have a signature barbecue sauce but you can find good southern barbecue in Georgia and any other state for that matter. Also, the Carolina's have a very popular vinegar style sauce that's very good.
So I'm very surprised to see Tennessee do so well in this poll. Looks like I need to seek out Memphis style again very soon. I wish I had a plate (platter) in front of me with each region's novelty bbq as a sampler.
