Ridiculous question. Its like saying "if you can eat only two things the rest of your life, what would you eat?" - Hmmm.... Oatmeal and broccoli. You'll never get the proper nutritional intake to make a difference and you're limiting yourself from what you could be. This is the same for exercise.
If you are just looking for our personal recommendations for the best two exercises, then I'd say:
Running/sprinting - distance running and high speed sprinting
Deadlifts - pretty much the only exericse where almost all muscles in the body are used
I'd still want to throw in squats and pullups though.
If you are looking for a "minimalist" workout, then look not further than Crossfit's "FRAN" workout:
Three sets of 21-15-9 reps of 95 pound (women do 65 pounds) squat thrusters and pullups done for TIME - (i.e., as fast as you can).

Not trying to be ridiculous, thought it would be an interesting exercise to see what people would narrow things down to. Think working out has gotten too complicated, it's a mental exercise to simplify stuff. Of course I use more than two exercises, but if I get caught short for time it's nice to have a couple of "go to" exercises that give you a lot of bang for the buck.
I picked the two (swimming and walking) because you can do that pretty much your whole life at any strength level.

Think walking is a very underrated exercise. Between walking and a bare bones lifting routine I am in the healthiest shape of my life. Used to run, race bikes and such so I had great fitness but lousy health. Was always sick and/or nursing injuries.
Don't swim and I may need to take it up. Read an article about the habits of active, older, healthier adults in their 80's & 90's and swimming came up as one habit that most had.
I run up our stairs 3 or 4 times a day. The hospital is 8 stories and a basement. For example this morning I was on 2nd floor where my office is and I ran up to 6th on my way to 8th when I was called to 1st floor so I ran down to 1st. When I got to the 1st floor door I was told to forget it so I headed back to 8th. That was fun actually. I get a rush when I finish doing something like that.
