Zucchini Potato Chicken Curry. I really improvised on this one and combined this and that without measuring anything except adding 1/2 can of coconut milk to simmer for 20 minutes and the other half the last 5 minutes.

It turned out very good.

Southern Chicken Casserole, thawed out from the freezer, and nuked! Delicious!

Gotta, gotta, gotta get rid of some of this mountainous leftover, frozen food I've got in the freezer, drat, drat, drat!!!

I was so pleased with the chicken fajiats last night--yummy! Thanks for helping me out here Sillypups with the stir fry idea!

Not sure about dinner tonight yet--it's American Idol night so it will be a easy quick clean up what ever it is!

I think tonight it's going to be Mexican food...

Spanish rice, pot of pinto beans, and either chicken/cheese enchiladas or I'll wimp out and cook up some smoked sausage.

Hi everybody. Been existing on fast food while nursing the worst cold ever as DH ain't a cook.

Did manage to make some beef barley vegetable soup, will have some tonight. It has sirloin chunks, fingerling potatoes, mushrooms sauteed in sherry, fresh green beans, onion, carrot, celery. DH's review is not good - too many veggies by far - but I like it.
