Zucchini Potato Chicken Curry. I really improvised on this one and combined this and that without measuring anything except adding 1/2 can of coconut milk to simmer for 20 minutes and the other half the last 5 minutes.
I am going to barbecue a ranch's worth of meat today. That way I will not have to cook for the next couple of days. Happy May! Enjoy your Sunday everybody!

Hi everybody. Been existing on fast food while nursing the worst cold ever as DH ain't a cook.
Did manage to make some beef barley vegetable soup, will have some tonight. It has sirloin chunks, fingerling potatoes, mushrooms sauteed in sherry, fresh green beans, onion, carrot, celery. DH's review is not good - too many veggies by far - but I like it.
