A combo of shake n bake pork loin country style ribs, buffalo chicken wings, meatball subs, and veggies, and grilled cheese sandwiches - which occurs at MY house at times! It's all good!
So many things....so, because of that, I now want PIZZA!

Lamb shanks. Cooked slowly in Chianti, little fresh thyme and a splash of fresh orange juice. Lid on to build the sauce and allow the steam produced to stay there and cook the meat.
At the end, I remove the lid, turn the heat up and reduce the Chianti sauce a little, adding a teaspoon of tomato paste, 1 of spicy mustard and two of heavy cream to give it a nice body.

The whole thing takes almost 2 hours, mostly is waiting for it to cook, no particular work to do. However if you have gas, you can put it on medium, medium-low with the lid for 40 minutes, then reduce it (open lid) for about 10 minutes, so that will cut cooking time in half.

I was supposed to have asparagousn with it, but my wife thought I was buying them, I thought she was...well, we are just going to have some lettuce/tomato with it.

To my taste this dish must go with red wine, which makes sense because you open the bottle of Chianti to do the cooking, so you can as well drink the rest.

By the way, the same thing can be done with Pork Chops, just sear the chops first over high heat, then do as for the lamb.

I love the idea of adding bacon to mac & cheese. Never thought of that. It sounds so good I'm going to try it next time.
