The only veggies I really don't care for are cauliflower, okra and asparagus. Not a fan of mushrooms either but I don't think there's much health benefit to them if any.
Raw veggies. I love tomatoes, but they are technically fruit. Give me a cooked carrot, fine, but a raw carrot? I chew and chew until I gag and can't swallow. Don't like the flavor of raw broccoli or cauliflower, but can eat them cooked, though without enjoyment. Hate asparagus in any form: the smell gets me even before the taste--like smelly feet. Same for cabbage in any form. But oddly, I like brussels sprouts (grilled al dente) and they are supposedly similar to cabbage.
I like raw and cooked spinach, preferably baby spinach, but it can't be mushy. I can't say I really "like" the flavor, but I just kind of acquired a taste for it. Like tequila.
I read someplace that people have taste buds that taste the chemicals in vegetables differently. I guess I have the taste buds that make them taste crappy.
Cucumbers-- To me they taste too much like melon, my least favorite form of fruit. I must also have those taste buds that make melon taste like ass.
Tofu. People claim that tofu can mimic anything, especially chicken and meat, and "you can't tell the difference." Well, I can tell the difference. Maybe I'm magic.
Avacado. Yech. Guacamole? Sure, bring it on! But avacado in its virgin form? I pass.
Cottage cheese. No longer touted as super-healthy like it was in the 70s and 80s, but it's still around, and people still seem to get it past their lips and somehow swallow. I just gagged a little thinking about it.
Grapefruit. Who decided this fruit was edible? Some people pour tons of sugar on it and eat it, but I think that's cheating, and they certainly can't then claim to like it with any honesty. I just don't "get" those people who actually DO like it. It makes my eyes tear, my lips pucker up. Grapefruit juice? I'd rather have a cocktail of paint thinner and fermented horse p*ss. Wait, maybe it's the same thing...
