Red Beans & Rice from an old Frugal Gourmet cookbook. It's a lot more involved than the side of red beans and rice you might get in a restaurant. Off the top of my head, the ingredients are red beans, ham, green bell peppers, celery, onion, garlic, bay leaves, a fair amount of butter, cumin, maybe a splash of vinegar. It cooks all day, and is best eaten the next day. But it is divine.
