Brussel sprouts, artichokes, broccoli, cauliflower, celery, red beets, turnips and now can eat them when it's in a dish or on the menu.

There are tons, but the three that come to mind most are:

Sushi - I had never tried it but was grossed out by it and made fun of it. Finally was convinced to try it by some good friends about 5 or 6 years ago and now it is probably my favorite thing in the world.

Black Olives - Hated them, now love them

Beans - as a kid I wouldn't touch or eat a bean of any kind whatsoever. Once again, now I absolutely love beans.

Ditto on both these for me as well. Although, as an aside, I still don't like the wrinkled, dry-cured black olives.

I never liked salmon until I started cooking it myself. I always thought it was too fleshy.

Lettuce, tomatos and celery.

I hated them all for years. Finally 10 years ago I decided to try again but with different varieties. I realized while I still hated iceberg lettuce, I could handle and love romaine.

I can't believe that I forgot that one. I have always loved seafood, but for years I hated salmon, couldn't understand why it was so popular. I love it now - a nice redfish is still my favorite fish/seafood, followed by a hallibut or chillean sea bass. But Salmon is right up there with them pretty much, I adore it.
