I put slits in the tenderlion and slice up some garlic and put it into the slits. Salt and pepper and add other spices that you may like. I am sure others here will chime in with other ideas a well.

stuffed meatloaf tonight. I put half the meatloaf mixture in the pan, top with stuffing and cover with remaining meatloaf. Make a gravy from the pan drippings and serve with mashed potatoes......mmmmmmmm so good.

Cuban Spiced Pork Tenderloin

Pork:
2 pork tenderloins, trimmed, about 2 1/2 pounds total weight

For pork, cut 4 slits into each loin and nest garlic and bay into meat. Place meat on nonstick baking sheet. Combine the spices. Coat meat with oil. Rub spices over the pork tenderloins and place in oven. Roast meat 25 minutes. Remove from oven. Let juices redistribute, then slice and serve with a salad or rice or whatever you'd like!

Here is the avacado, citrus salad recipe I said I would post...would probably go very well with HighlandsGal pork recipe!! Which I just put in my recipe file!!

AVOCADO CITRUS SALAD

You will need:
- Romaine (or other green leaf lettuce)
- 1 ripe Haas avocado, peeled and sliced
- 1 sweet pink grapefruit, cut in half and sections removed with paring knife, or ??
- 2 Tbsp. toasted, slivered almonds (about)
- 2 Tbsp. Feta cheese (about)
- Rice vinegar
Place well-rinsed lettuce leaves on 2 small plates. Alternate avocado slices and grapefruit sections on the lettuce. Sprinkle toasted almonds and feta cheese over the salad and sprinkle lightly with rice vinegar.
Makes 2 salads. This is not only a beautiful looking salad but ever so yummy!

The Pork Tenderloin that I make is: (make in a tin foil pan as it is hard to clean the regular pan)

3/4 lb pork roast ( approx)

score pork and put in oven for 1 hour

in the meantime mix:

1 cup brown sugar
3-4 Tablespoons Rum (any kind)
pinch of black pepper
1 tsp garlic powder
1/2 teaspoon cloves dash seasoned salt

Mix together..will be very thick

After the pork cooks for an hour, take out of oven and cover roast with this paste mixture

Put back in oven and cook for one more hour.. Baste occasionally.


You can use any size pork tenderloin just adjust your cooking time. 30 minutes to the pound @325.

I cannot even believe how big my recipe file is now!! Just added crazyworlds pork tenderlion recipe too. I'll have my own recipe book soon!! It's the best!! Thanks to all of you!
I'll bet elston is eating some great chowder or lobster about now......sigh.....sure hope he's having a great time.
LaseyEx had some problems with her flight out but finally got to NJ--tired but happy to be with her kids and grandkids! Miss her and elston!

Tonight I am making pork steaks with mashed potatoes, applesauce, brussels sprouts, olive and herb filone (bread) and fudgy brownies! I was bored today and it's so gloomy out I needed to bake so the house would smell yummy!!

Okay, I'm lost. What is coucous?? The shrimp sounds great--you cook the shrimp in orange juice or with orange??

Crazyworld, that pork tenderloin sounds wonderful. You know you guys have got me very hungry right about now don't cha?

I'm supposed to be at a baseball game, and that means eating out, but the dratted thing got rescheduled so now here I am with a meal to plan. sigh.

gonna fix breakfast--hot biscuits, bacon, eggs and gravy. can't go wrong with this on a windy and cold night I guess.
