Glad to hear you are fine.

And for dinner I tried something new to me: boneless chicken breasts dipped in eggs & milk, then into flour/parmesan mixture (salt, pepper, garlic, paprika); bake for a little more than 1hr at 350d.

Absolutely delicious served with jasmine rice and fresh vegetables.

Tonight we are going to have steak strips and vegetables served over a mixture of brown and wild rice. Maybe I should stop at the store on my way home and pick up some tortillas......

I am using up small packages of stuff from the freezer.....a small steak--pan grill; two chicken thighs with skin and bone and 2 pork cutlets are both marinating in Italian dressing with crumbs and will be baked; rice and maybe carrots will round out the meal. (We eat late; so no rush here!)

Cosco has a huge bag of stirfry veggies. Get a bag of frozen tail off shrimp. Add stir fry sauce and serve with rice. Cooked chicken, pork or beef works well also.

posting very late, been a heck of a couple days again, just picked up the biggest house I have ever even thought about...... since this is the food and drink forum, I have to tell you that DH bought me a bottle of Perrier Jouet Rose champagne to celebrate!
I asked him to take me to the market, we bought boneless center cut pork chops, I pounded them, and did them Japenese panko style, with risotto with mushrooms, and sauteed baby new asparagus..... I am over the moon this evening, y'all, just wanted to share my happiness!

Tonight, no mercy for the arteries. Roast boneless leg of lamb w/garlic and rosemary (coffee in the gravy..Does anyone else do this?), fresh asparagas, mashed potatoes, salad, mint jelly, a loaf of big, hefty artisan bread, and chocolate birthday cake.
