Thank you everyone. You are all wonderful!! It isn't easy and we're doing just ok. Amber went back to her brothers today as they are all celebrating St. Patricks day at my sons home. It is her hubbys last day here and he and my son a good friends. It was wonderful to have them here and she and my grandson will be back in a couple of days to stay a bit longer. I am looking forward to that. Thanks for keeping the thread up and going with happy faces and wonderful menues!!

I forgot to get a can of biscuits to go with the corned beef and cabbage so that will be a stop for her on the way home. Not really interested in a dessert but a buttered biscuit would be welcome.
I fried boneless/skinless chicken breasts in thin slices in some hot oil and put it into the oven to stay warm. In the oil remaining in the pan, I fried an onion (cubes) and some garlic, added some veggies (peppers, carrots, peas) and poured coconut sauce all over it.
For spices I used curry paste, chili, turmeric and some pepper. Very yummie...

Tonight's feast will be: hamburgers off the grill (wish I had some velveeta - they'd be cheezburgers!), bush's baked beans, leftover steamed cauliflower/broccoli/carrots (fresh, not frozen) and various pickles, etc.
I need to get up soon and cut up the cabbage and put it in a pot with that flat of corned beef over it. Wife is bringing biscuits so looks like we will be well fed once more.

Lordy lordy.....seems like you are always well fed Nomad... and may you always be so! (altho you really should have mixed up some Irish Soda Bread to go with your boiled dinner).
The corned beef is resting gently on top of a pot of cabbage with a lid on it. Now all I need to happen is the wife to get home before I burn something...I have it simmering on low heat but even that is not full proof with me. I had better go get the timer and set it for 15 so I'll check just incase she is running late.
