Well there is Mardi Gras going on all around me but I have had enough of parades. DD and I are going to the grocery so not sure what's for dinner yet. I have off of work today so some yummy cooking is in order. I am also going to finish up some yard work. Beautiful blue skies and I think it's going to be in the 60s.

Too busy to check in every day and to share all the things we have over here Anyhoo, I tried a new recipe today and it was very good, even DH loved it! Wanna know?!?!

(for 4 people)

- 4 slices of low fat pork cutlets
- 13 oz ground meat
- 1 garlic clove
- 3 table spoons mustard
- 1 egg
- 2 onions (one chopped in fine cubes, the other in thicker rings)
- 1 tea spoon pepper corns
- 1 bay leaf
- 1 glass dry white wine
- 5 large cups of veggie broth
- 3 table spoons sour cream

Take the pork cutlets and beat them really thin, season with salt and pepper.
Press the garlic glove into the mustard and stir well slather this mix onto the cutlets.
Mix the ground meat with the onion cubes and the egg (add spices to your liking e.g. chili powder etc) and put the mixture on the cutlets. Roll the cutlets into rolls and fix with little wooden (tooth?) picks.

Fry them in some clarified butter (or only oil) on every side till golden brown. Add the onion rings, pepper corns and bay leaf. Pour the wine over it all and let the liquid reduce while cooking.
Put everything into a deeper pot and add the broth by and by. The liquid always has to reduce itself to get a good gravy.
Let this simmer for about an hour.

Take the rolls out, add some sour cream to the gravy and add some more spice to your liking. Put the rolls back and let it simmer for 5 more minutes. Very yummie.

We had potatoes and carrots along with it.

Do you mean the one she gave me directions for yesterday, or is this a different recipe?

Good morning all. I've already decided on tonights dinner. Chicken cutlets, mashed potatoes and candied carrots. Boring meal but we all love it
Tomorrow for Ash Wednesday will be fish. I'll go to the store tomorrow to get whatever is fresh

Good Afternoon Foodie Friends! While munching on my grilled ham & cheese sandwich, I have a roasted red pepper, San Marzano tomato sauce simmering with a whole bunch of veggies and grilled chicken pieces, to top a 2 lb. container of Penne which I will be making up in a little while to bring to hubby's dr's. office this afternoon.

Dinner for us tonight is going to be good old bacon, cheeseburgers, on honey buttered toasted rolls, with h/m french fries and a salad. Simply simple tonight.

We are going out with friends tomorrow night if hubby's report is ok from the doc, to an Oyster bar. I am looking forward to it.

Thanks for asking crazyworld.

Every department was notified about the reductions on Friday......except mine. I am still waiting to hear and getting mighty irritated. Supposedly it is between me and another teacher who is also a coach and he had a game on Friday. Speculation is that they didn't want to tell him before his game and he was out yesterday.

I better hear one way or another by the end of the day because it is driving me nuts.

HG... I hope you hear about your job status soon! That's just so stressful!

Tonight I'm having steak and pasta with red sauce. With the A1 Bold and Spicy sauce I love.... tossed salad with balsamic vinagrette (Good Seasons), and italian bread.

Tomorrow's dinner will be fun... but I'll share that tomorrow...
