Not positive but thinking something with chicken---maybe chicken quesadillas. Never made these before (like last nights dinner which turned out great) but sounds good! I have some flour tortillas I need to use up and the Mexican cheese mix plus some chicken breasts so guess I have all I need. Oh yes, I also have the sour cream to top it with! Yum. Now I just have to see if hubbie goes for it! The spinach salad was great with dinner last night lacey---thanks for the idea. Might have that again tonight along with the quesadillas too.

Good morning all-now that we're all going to run and make pierogies-yum.

Cyn-glad you enjoyed the spinach salad-also good w/strawberries and raspberry vinegarette.

Pretty bad weather day here-not sure yet what dinner will be as we thought we'd go out tonight, but severe storms and hail predicted all day and night. Could be linguine/brocolli with oil and garlic or pepper n onion subs.

Good morning everyone!

Well - after all the "panko talk" tonight I'm making chicken cutlets with panko.....mashed potatoes.......and ummmmmm probably corn......I hate corn...can't even stand the smell of it...but the family tells me it goes so well with chicken and potatoes!

I'd like to make a fruit salad. Blueberries, strawberries, kiwi, grapes, etc.....but I have a question - is fruit dip healthy? I love fruit dip...and so do my kids...but I don't want to make it if its not going to be something we should be getting accustomed too. So ....what do ya think? We are pretty much salty people so we tend to grab the real junk fritos, chips, etc - so I guess anything with fruit is better LOL.

Nic nothing like a big fruit salad-I do blueberries, strawberries, raspberries, blackberries sprinkle with brown sugar. Serve it plain or over angel food cake.

I know it is not exactly nippy weather yet, but I'm making some chicken mull, which will also serve as a base for another chicken stew with tomatoes and corn. The latter gives me a chance to use up and excess of fresh vegetables I have. I'll probably end up with about a gallon of mull and/or chicken stew. I'll probably also have some creasey greens.

Burdell has got me into "peasant food" frame of mind. Not that is a good thing as it is time for reflection. I just might make up some old fashioned fried potato sandwiches. Of course will need to find a little nutrition to go along with them. A vegan dinner may just be on tap. We will see as the day progresses. After the huge grub stake we brought home over the weekend. I can't find any thing I want because we did not get a cabbage

Tonight it's beans and cornbread/tortillas with homemade hot salsa, baked mac and cheese, and depending how much mac actually gets thrown in the pot, possibly mac and tomatoes with jalapenos or serranos!

Are the jaapenos and serranos locally grown where you are? This salmonella scare has be pretty wary of anything that isn't grown nearby.....especially tomatoes, and hot peppers and cilantro. They have all been mentioned as possible sources of the contamination.
