Things fried or baked in panko tend to come out nice and crispy.

Fish too? I have a need every so often for crispy fried fish. I would like to try some fish done in my Smart Balance frying shortening.

Definately fish. In fact...we are not fish people and because we have now used the panko....we are look for some recipes for not so fishy fish recipes. I just don't know what kind to make or what to make with it. LOL

You use panko anywhere or anytime you would use regular breadcrumbs. The only difference is the food comes out even more crispy and delicious!

We like Cod, Fillet of Sole, Haddock, Halibut. Some flounder is very good too but be aware that all flounder is not the same. It can be fishy or very good depending on the species and the water taken from. We read the "Product of" on the package. If it's not USA, Canada, Iceland, Greenland, we don't buy it. None of what I've listed have ever been fishy for me. I'm picky about my fish. Fishy fish is nasty. Fresh grouper is good also. At $17 a pound I'll pass though. As for fresh water fish there are fewer choices for me. I will fix crappie if I catch and handle them properly. Rainbow trout are not for frying. They can be baked or smoked and I'll eat.

So what do you serve with fish? For instance....when I make chicken we have rice and a veggie with it. What goes with fish? Another problem I have is that I like gravy on everything. lol.......I don't think gravy goes with fish

Tonight is baked Mostaccioli! Never tried this before but it looks and sounds so good! The recipe is easy so that makes it even better. Will probably add a few of my own ingredients so we shall see how this turns out. Will let you know tomorrow!!

Nic you could have a baked potato then you could have your gravy, lol. I usually have rice and a salad when I serve fish.

Dinner tonight, haven't got a clue yet. Just got back from the farmers market and they had some good looking corn on the cob. I think I am going to see if hubby will grill it for me along with maybe fish or steak or both. LOL Have to see what I am hungry for as the day goes by.

We need to get you in to making tomato gravy for the rice with fish. I like veggies with fish like: Collard greens, mustard greens, wilted spinach. Anything leafy and low in cals that the fish and rice are heavy laden with.

I too am a gravy addict. Also if ya know about them there "Grits" they too are a common staple with fried fish in the south in place of the rice. We don't usually do the "Chips" thing with our fried fish. A little moderation on the frying part can't hurt.
