Beef stew-a-la-Minestrone = leftover beef stew with pasta and shavings of dried cheese atop the pasta.
The stew was prepared with spinach, zucchini, tomatoes, carrots, onions, celery, parsnips, potatoes, oregano, garlic, basil, a bit of cilantro and parsley.
No Italian cheeses on-hand and I typically use what I have on-hand. So today, the cheese is an imported Gouda from Holland that has graced my refrigerator for a couple of months.

I had a ham and brie sandwich. It was house smoked ham, brie, sliced granny smith apples, and caramelized onions on 12 grain. Came with some house made potato salad - which was tasty...i am pretty picky about potato salad so i was impressed!
