I made my boyfriend and I spaghetti with pomodoro sauce, garlic knots, and a spring mix salad w/english cucumbers, red onions, and a homemade dijon vinaigrette.

All the veggies r coming in now and making more egg plant parm this weekend, had veal parm tonight. So it's gravy with sausage's and then the parm. My 6 month old computer fried recently or i'd be posting morer (motherboard) Also one big salad this weekend too and some NY strips on the grill. TGIF ALL! Enjoy ur weekend eats and family!

Fried green tomatoes. It's that time of year...I picked some HUGE green beefeaters that are perfect for fried green tomatoes, which DH loves. Actually, that's how I bribed him one year to watch the movie "Fried Green Tomatoes"...fixed him fried green tomatoes to eat while watching it. (He balked at first, but really liked the movie).

I slice them thin, nuke them in the microwave a half a minute, dip them in egg and milk, dip them in seaoned flour, re-dip in egg/milk, then coat them in cornmeal/breadcrumbs and fry. I picked some nice zukes, too, so I'll make zucchini fritters to go with them.

I froze the carcass from the beer can chicken I made last week. So I defrosted it, stripped it of meat and now I have it simmering on a back burner. I am going to turn it into a summer vegetable dill chicken soup for tonight's dinner.

we are having chicken leg quarters over Saffron rice, plus a fruit salad and I guess snow peas.
