We seem to be on a fish/seafood kick at our house:
Creole flounder with seafood sauce, garlic potatoes and cheesy broccoli casserole with a bottle of Chardonnay. Apple-walnut cake for dessert with whipped cream.

Cold super windy weather is rolling in and a few of us with upset stomachs too so it calls for a hearty warm mild meal. Going to make a chicken and dumpling using shortcuts. I chopped a ton of carrots, celery, mushrooms, garlic and onion with a box unsalted chicken broth and a whole rotisserie chicken that was skinned. Later on will make the dough for the dumplings with fresh chives.

It's the classic biscuit style dumplings:

1 cup all-purpose flour 1 tsp baking powder. 1/2 tsp of salt/pepper, pinch baking soda 2 tablespoons unsalted butter, melted and 1/4 - 1/3 cup buttermilk. Stir and I add about a small handful of fresh chopped chives. (I use korean chives/burchu) The buttermilk differs on how thick, so sometimes it's just a little or a bit more. I eyeball it to have a wet sticky dough. I also like bite sized dough balls, so I use a tsp to scoop and place in boiling soup.

A homemade pizza made with a whole wheat pita bread, part-skim milk mozzarella cheese, oregano & ketchup, a blueberry Greek nonfat strained yogurt and a mug of tea with a teaspoon of sugar & a bit of skim milk.

Pot of homemade veggie chili with a bit of crumbled sausage added for flavor. (tomatoes, black beans, kidney beans, onions, green chilies, and shredded carrots to up the veggie content)

German whole grain Wasa crisps with goat cheese and sun dried tomatoes.

Sparkling fruit juice.

trying a new chicken recipe tonight. Cheryl's Fancy Pants Chicken

cut chicken breasts thin
then prosciutto which my store didn't have so I'll use bacon or lunch ham
pile on fresh spinach
mushroom.
then mix together olive oil, white wine, envelope of herb and garlic mix from Lipton and pour over chicken
cover with foil bake for 30 minutes at 375,
top with mozzarella and bake for 5 more minutes

sounds good to me
some sort of potatoes
salad
decaf iced tea with frozen blueberries and fresh lemon
