Hi peeps! I've been super sick for almost the past week so whatever food I'm eating has no taste what so ever. I'm actually feeling decent today so I think we're going to hit Outback with a GC bf got for Xmas.
Finally, first whole day without a fever (sinus infection)! So I went to the gym, grocery shopped, and was too tired to make dinner, so cottage cheese & tomatoes it was. Well, for me. DH had cottage cheese & peaches.
Tacos from Baja Fresh with a couple Dos Equis while watching the ball game. (Can you tell from my past two dinners that my gf is out of town). LOL--she usually cooks.
I posted tonight's dinner earlier in the thread, but I thought I'd mention that I've been experimenting with the Good & Cheap Cookbook. No Kudzu, if memory serves, first posted a link to the free PDF from author Leanne Brown's website awhile back, and I've been cooking from it all week. The spicy broiled tilapia and crispy green beans I served tonight came from the book. I rounded out the meal with a garlic roasted potatoes topped with a drizzle of creamy green chili dip that I lightened with a splash of milk. I sprinkled everything with a little chopped cilantro and a squirt of lime juice. For dessert, a quarter of a Sumo mandarin. Everything was absolutely delicious, and it all came together so fast with the most basic of cooking equipment. Definitely a keeper meal! BTW, the peach coffee cake from the book is also fantastic. The kids are fighting over who gets the last slice for tomorrow's breakfast.
