This is so funny, tortilla pizzas are my new most favorite thing! They are so easy to fix, and gives me the pizza fix without the huge carby crust. I have an actual pizza pan with holes in it that make the tortilla crispy just like a thin crust pizza.

I take zucchini and onion, dice it up, stir fry it quickly so it gets brown, transfer it to the tortilla, sprinkle with cheddar...yum!! Or I take a little pizza sauce, sliced onions and bell peppers, cover with mozzarella...yummy!!

P.S. Mission tortillas work awesome!

Instead of a carby flour crust, I use powdered almonds.

Instead of sugar filled tomato sauce, I just use a broccoli puree.

Instead of mozzarella cheese, a bit of tofu crumbles.

Much healthier than real pizza but it tastes just like the real thing!

The only thing about pizza that is unhealthy is a big fat pizza crust.

True. I also find that a little cheese goes a long way and that I can use reduced fat cheese. That way I can cut down on saturated fats as well as the carbs from the dough.

PS. I must get one of those pizza pans -- with the holes in it -- that you speak of. Fabulous.

Funny this came up, I am trying the cauliflower crust right now. My mom can't have carbs/flour etc so she wanted to try out this recipe I found in Recipes forum here. Draining cauliflower now as I type this. If it doesn't work out, I am trying your idea with the corn tortilla that I have here.

Oh I know! I would never ever blame you. I am definitely not one of those reviewers that say, "This recipe sucks! It tasted horrible and my family said it was the worst recipe ever! I subbed out the butter for oil, subbed out eggs for applesauce and subbed out flour for ground almond..." LOL No!

But I will try it with the flour tortillas for myself when I get some.

I took a nibble of the crust out of the toaster oven just now and it's actually really TASTY! I am so surprised. I need to tweak a bit for seasonings to my taste but there's huge potential.
