They're supposed to be good for you but I find them too fishy to be eaten straight out of the can or with crackers. I did make a salad out of one the same way people make tuna salad and that tastes great on a sandwich. Any other idea is welcome.
I particularly don't like it BUT hubby likes this recipe:

In sauce pan, saute thinly sliced onions till translucent. Then add a small can of tomato sauce, bring to a bubble. Salt/pepper to taste. Then add sardines. Serve it over rice.

You can season the sauce with creole spices or hot pepper or favorite herbs etc. Hubby liked the creole spices the best.

Here is what I did with some sardines someone once gave me (as well as some other canned fish).

I put them all together in a bag and donated them to the local food shelf. Best thing I ever did with them!

Use them as bait to catch some tastier fish!

Try a different flavor. The Mediterranean ones from Crown Prince are nearly enjoyable. Follow up with a well-roasted sweet potato. Or switch to smoked kippers.

My friend's wife from the Philippines has done this for years.

Make sure you get the "double-layer" tins; the sardines are much smaller than the "single layer" tins.

Ah yes! Those wonderful tiny little King Oscar brisling sardines. I eat them straight out of the can with saltines--just don't drip any oil on your clothes--it's quite fragrant!

I'll have to try your tip, Dirt Grinder. I've never had them with malt vinegar.

Oh man, don't get me started. I was eating some sea lion style one night and dripped oil all over one of my favorite tee shirts. Every time I pulled one out of the tin, and raised it above my mouth, a drop of oil hit my shirt.

I occasionally buy them and fed them to the dogs. I find the smell of them to be gaggingly disgusting, so the dogs don't get them very often.
