Quiche with spinach and red bell pepper. I'm also hoping to extend the white chicken chili one more day by adding scallions, egg and bread crumbs. Hopefully, it will form into patties once chilled and I can saute them.

Salmon with garlic dill butter, squash and I don't know what else. We were supposed to shop today. Instead we are going tomorrow and I cleaned out the fridge today.

Tonight is supposed to be our crazy early dinner night. I usually take my nine year old to ski team practice but it's raining. RAINING?!? Raining in February!! HORRIBLE!! So in honour of my disgust at rain instead of snow I am making a big fat vegetable lasagne. I just called the husband and told him to pick up some Magic Hat #9 on the way home. I am going to have a couple beers tonight for dessert while I grumble about the crappy too warm, not enough snow winter we are having!!

Take out I am craving a cheeseburger from the diner, but I'll see what hubby wants, as long as I don't have to cook.

Nigella Lawson's macaroni, sweet potato, cheese and sage casserole, Polish sausage.

Update on the mac and cheese....It is nice and yellow, creamy, but a bit bland. Worth a try. It has lots of sharp cheddar and 4 oz of feta, so maybe its just me.
