On my own tonight and I think I'll just scavenge a meal. Probably just cheese and crackers. I was fighting the crowds at the grocery store stockpiling before the storm and I just can't be arsed to cook anything new tonight.

Pan fried chicken cutlets, whole wheat spaghetti with garlic and oil.

Italian sausage with garlic in a Marinara sauce served over spaghetti topped with grated Parmesan cheese. A hearty serving of steamed green beans and broccoli completes the meal.

I love making green enchilada sauce chicken with rotisserie chicken from the market, picked, torn pieces of toasted tortilla, cheese, sour cream, olives, cilantro layered in a casserole and heated until bubbly. *hint* mix the chicken with sour cream to make it easier. Too easy and so good!

OH! I forgot the tequila!

I had Zatarain's chicken gumbo. A box of Zatarain mix in the pantry that I finally decided to use. I don't eat box processed foods like that often, so I tried this one out, not knowing what to expect.

I added some cooked chicken, a bit more brown rice, cooked it up, and it was really good! (Gave the dogs a couple of spoons of plain brown rice, which is good for them, with a spoon of the gumbo juice on top. They lapped it up but quick!)
