We are having chicken leg quarters over rice, a fruit salad ( actually have some fresh fruit in the fridge) and I guess I will use up the zucchini squash I have had in the fridge for a week or so now.
Made a big pot of ham & potato soup last night, so that will be lunch. Dinner will be chicken. Chicken what? No idea. I asked DH if he'd rather have chicken & rice or chicken & dumplings and he hasn't decided yet.
I really don't feel like cooking anything. I have to get tomorrow's flank steak marinating, and make another Cheeseball - probably work a little too - I'd just as soon pick up Burger King or McDonald's. Or, in a perfect world, White Castle. Or even a gyro. Sigh. I just don't know.
And husband just now requested I make Brownies too. It's really not shaping up to be a relaxing, do nothing Saturday, is it?
Last night (sorry) was at Great Wall Super Buffet for Chinese. Had peppered beef, baked fish, baked calamari with onions, fried rice, teriyaki chicken, and whichever Chinese dishes had green and red peppers.
And iced tea.
Tonight? Olive Garden if I don't get to cook at home.
Homemade taco chili soup. Homemade peanut butter pie.
Brown 1.5 pounds ground turkey, in a large pot add
1 can rotel
1 can refried beans
1 can kernel corn
1 4 oz can tomato sauce
1 pkg of taco seasoning
1 can chick peas
Cover with chicken broth
Top with low fat Mexican cheese
Peanut butter pie
1 graham cracker pre formed crust
5 oz red. Fat cream cheese
1/2 cup conf sugar
1/3 red. Fat peanut butter
8 oz Fat free whipped topping
Cream sugar and cream cheese, then add peanut butter, whip till smooth, fold in cool whip, then put into the graham. Refrigerate until firm, drizzle with some Hershey syrup.
