There are many other cuisines that incorporate the use of MSG. People just love to hate on the Chinese...

There are a bunch of small family owned Chinese restaurants where I live. Chinese and pizza/Italian generally.

Even in many of those Chinese restaurants serving Americanized Chinese food, you can often order more authentic Chinese dishes not on the menu, just ask the owner / waiters.

I have tried that. They often suddenly have a difficulty in communication.

Not fading out here in Northern California. If anything, more establishments are opening up, catering to different tastes, price ranges, and demographic groups.

Obviously Cantonese cooking had the most early influences on development of American style Chinese food but it has also long adopted/absorbed western versions of other regions of China including Sichuan, Hunan, Shandong, Taiwan, Fujian, and Beijing.

What you won't find in Guangdong (Canton) is people sitting around eating the classic American Chinese food dish beef & broccoli. They have adapted some westernized cooking habits (like using corn starch for some dishes) but I've yet to see broccoli in China.
