What kinds of easy, little prep required dishes do you make for company? I recently cooked a great beef stew in the crockpot, made a green salad, and cooked apple crisp but it required hours of prep and I want something fast, easy, but really tasty.
I like to cook a pot roast in the crock pot, grill Tri-tip, Korean style ribs, spaghetti & meatballs, Thai curry or chicken quesadillas with beans and rice. These can be prepared reasonably quickly.
A seafood casserole that is heavenly and tastes like it takes a lot of work to prepare, but it doesn't. I serve it over buttered noodles with crusty Italian bread and a salad. Easy parfaits for dessert: crushed shortbread cookies in a parfait glass topped with either raspberry or lemon sorbet (sometimes both) and a whipped cream top layer (add a cherry, a curl of lemon or a couple of raspberries).

I just went on girls' weekend trip, an each of us was responsible for a meal. I was preparing to come up with some fancy complex menu to "impress" everyone, but then they requested that I make my salsa chicken. I was a little disappointed that I wasn't going to be able to do something a little fancier, but I went with it. Turned out to be a good thing, because it meant I could spend more time hanging out with them than hanging out at the stove.
It's literally chicken breasts, an envelope of taco seasoning, drained/rinsed black beans, drained corn, and a jar of whatever salsa you like (we went with peach mango). 3-4 hrs on high or 6-8 hrs on low. Shred the chicken once it's cooked. It can be served over rice, or on nachos, or in tacos. I put out some cheese, cilantro, sour cream, and lime wedges. It disappeared fast! And it was cheap!
I like to do a beef shepherds pie aka cottage pie, with a small green salad on the side. I would buy desert, as I am not a great baker. but this time of year I could make a pumpkin pie. Your beef stew sounds good.

Dessert is either fresh, perfectly ripe pears with Parmigiano-Reggiano or chunks of brownies with vanilla ice cream.

I make stuff in advance and freeze. For us it's traditional to eat pigs in blanket. well, I stuff those cabbage leaves, cook them and freeze them weeks in advance. soups can be made in the same way, although a butternut squash soup can be made quickly in the pressure cooker. Other than this, delicious and fast is mashed potatoes and grilled steaks.
