Honestly, my best experience with frozen fish has been fish that I catch and freeze myself. Catfish, Crappie, Perch, Walleye...

I've never been impressed with a lot of store bought fish except fresh salmon.

And I'm not at all snobby about food or freshness in general...Something about Fish gets me though.

To answer your question, white fleshed freshwater fish seems to be the best.

I grew up eating fish and living on the coast my whole life. Have eaten fresh fish and frozen fish. Costco has very good frozen fish that is excellent. The Cod, Mahi-Mahi, Wild caught Salmon, and scallops are all excellent.

Salmon holds up pretty good, but like havng fresh walleye in Ontario, Canada or fresh seafood in even the cheap diners in Vancouver, BC once you get used to FRESH FRESH it's tough to go back or be in another city, (like Calgary) where you are told it's "the best seafood in the city" and you think......crap....this stuff was frozen and badly prepared.

Our supermarket tells you if the fish was previously frozen or if it's fresh. We do get some fresh, not previously frozen fish, especially from the Texas Gulf coast.

One thing I do when I see a fish I like in the fish case that says “previously frozen” is ask them if they have any in the back that's still frozen. There is no point in buying thawed fish unless you're going to eat it the same day, and that's not always convenient. I like to have frozen fish on hand for later in the week. The only problem is that sometimes the still-frozen fish is in larger pieces. I still buy it and then cut it and portion it when I get home and vacuum seal for future meals. My favorite is Mahi Mahi.

Lately we've been enjoying frozen flounder filets and love them. Small filets. Beware such as Arrow Tooth flounder as it is mushy. Flash freezing on the ship were fish are caught has allowed most white fish to fry up nicely without being fishy for us anyway.

Anybody have more brand name recommendations for frozen fish? Store brands aren't helpful to me because I don't live near any of the stores mentioned.

It’s not so much the brand name as much as the species of fish. We avoided all pre breaded products and choose cod, halibut, haddock, small flounder, and orange roughy. Then thaw and coat light lightly with cornmeal/flour mix that’s seasoned with some Everglades Seasonings. HTH

Glad I read this thread! I can't always find fresh at the local fish monger but there's a PUBLIX right down the road. I do like baked grouper with a fresh mango salsa.
