It's suppose to be in the high 80's today so cooking does not sound like fun. I'm trying to figure out something to cook that would require little kitchen time--I know--DH can grill tonight. Now to get him to agree to it!!
It started out as another rainy day but I see some sun poking through. I was supposed to start planting some veggies tomorrow but with all this rain I am very far behind.
Dinner tonight will be Ham steaks, mashed potatoes, and green beans.
Ahhh Lisa, you may not be done with the rain yet my friend. Was just looking at the radar and it looks like you could be having some interesting weather coming your way. We aren't getting that much rain here because the mountains are stopping it and it seems to be pouring up in those mountains!! It's kinda been hit and miss here. When it has rained it has poured but not for long periods of time. Hope you get enough dry time to get some veggies planted! They will love the rain!! I ended up planting my last two trees in the rain although it wasn't raining very hard!

Dinner will be very light since tomorrow will be a HUGE spread for the family gathering for Mother's Day. Thinking a Broccoli Slaw Salad with extra tomato will do just fine!
Going to a pool party today, though I don't know if I'll swim.
So dinner will be whatever they are throwing on the barbie.
I wasn't told to bring anything and I don't know what they're having, so I decided to make this delicious cucumber-cream cheese dip my aunt makes and serves with Fritos. It's a little different than your usual dip, so I figure it shouldn't interfere w/ anything she might have planned. Do y'all think that'd be OK?
3 pkgs cream cheese, softened
3 cucumbers
dash salt, garlic salt
medium chopped onion
Remove seeds from cucmbers and blend in food processor. Then blend in with cream cheese. Add in the onion and spices of your choice and to your taste. ( I remember how important it is to wring out the cucumbers in a dish towel. I didn't the first time I made the recipe and it wasn't as good.)
This sounds like a lot, but this dip always gets gobbled up fast at parties. Heed my mom's advice about squeezing the heck out of the cucumbers in a couple of clean dish towels or you'll be sorry!
I've tried it with other things, but it is like it was designed to go with Fritos. MMM.. Can't wait!
P.S. Mom didn't say to peel the cukes, but I'm sure she meant to, because this dip is white. I'll report back on my results later.. this is my first time making it, obviously.

Well, the sun was out for about 5 mins....lol. More rain later in the day.
However, it's suppose to be a beautiful here on Mother's Day ...we'll see if they're right.
Son and g/f are coming in from Long Island later this afternoon to stay for the weekend. Tonight for dinner, I'm making, stuffed shells, sausage and garlic bread.
I doubt I'll be able to post tomorrow, so I'll write what's going on now.
Big BBQ at my house with my other son and his g/f and my FIL, too. Son's are cooking up Lobster Tails and BBQ Shrimp for all of us. I made homemade potato salad earlier for the feast. I'll probably make some cold shrimp later this evening in case anyone wants shrimp cocktails.
