Dinner tonight is very simple, I had lots of things to prepare for..so I made Home made Meatballs and spaghetti, I will have that with a side of mixed lettuce & tomatoes and Buttered French bread.
I am going to bread and fry boneless pork cutlets.....hopefully fry not dry the pork. I am not sure if I still have panko....if not I saw some progresso flavored crumbs in the cupboard. I need to cook some kale....and then there is some left over rice.... I am all set!
I'm thinking bacon and some really creamy homemade cheese grits. I have no idea why I have a taste for that this evening.
I'm going to fix some now.
Ah. Saturday I had cheese grits for breakfast all smothered in good ole tomato gravy....First time in a long time. Had bacon and a fried pork steak. We do fish and grits for supper a lot. Good combo with fresh out of the garden mustard greens.
Anyone have a good summer squash recipe or idea? I have deep fried them, but now want to do something else. I am not really thinking a casserole, since I don't have the ingredients right now.
I don't know if this is any great revelation, but when I cook either yellow squash or zucchini I always just put a plop of butter in a pan, get it sizzling hot (don't burn the butter), add the sliced or cubed squash, heavily salt and pepper, and crank up the heat Stir it a few times, then turn off the heat and cover. If there is any excess liquid in the pan, crank up the heat again until it cooks off. Pure, buttery squash at it's best.

My DIL's mother works in the meat department of my grocery store. She says "they've totally ruined pork by breeding all the fat out of it". So it's not our fault.
