Hello everyone, I hoppe you're all OK.


Tonight I am making chicken Chasseur with long grain rice . I haven't made it in years so hopefully it will still turn out OK....

DH gets home on Thursday, so I'm planning to make Coq au Vin out of Mastering the Art of French Cooking, since I saw the Julia Child movie last week. I'm also going to try the yummy sounding salmon cake recipe I saw on the Food Network the other day.
Alas, today and tomorrow I need to eat all the leftover crappy food I've been eating while he's been away (Walmart pizza and Chicken enchiladas).

We made the coq au vin (m-i-l + f-i-l + me) for my inlaws' anniversary. It was very good. I must say that even with 3 people it was a lot of work! Unfortunately for me, cooking anything labor intensive that takes hours to make pretty much removes my appetite for it at dinner time...


I bet that movie has caused a run on boeuf bourguignon ingredients too!

There appears to be lots of chicken on the menu today!

Tues are crazy here...D always has meetings, but not always at the same time. And S has a 2 hour activity and sometimes scouts on Tues. And I have to drive them all!

I'm thinking chicken soup. I've mentioned here my chicken soup "secret"....I typically buy a rottisserie chicken from WalMart each week (or so) and pull of the meat and freeze it. So that is my base! And I use wide egg noodles. Thinking of getting another yummmmmy loaf of potatoe rosemary bread from Albertsons.

Having the second half of my Mrs. Budd's pot pie tonight with a side salad. Not going to Maine yet after all. Might not even get back up til after my classes in Louisville next week.

Unfortunately you are missing one heck of a week in Maine!

I did make chowdah for supper last night and just had some for lunch.....for supper I am thinking I might be in the mood for a big hamburger...I have a dead ripe tomato that I need to use....

I have convinced myself....grilled hamburger. Having it my way.....with lettuce, tomato and special sauce on a seseme seed bun.

I have some french fries I can make to go with that.

I may pick up some ice cream for dessert.

I think we are keeping it simple with a taco salad done up with chicken...meal in a bowl!
