This is my first day back to being a vegetarian, so I made a big pot of lentils with carrots, broccoli, cauliflower, cilantro, onions and garlic in vegetable broth. It's usually served with rice but I think I'm going to skip it today.
I make this all the time, but I usually use diced plantains and butternut or calabaza squash and add Goya chorizo or smoked ham to it.
Barbequed kangaroo fillets that I had marinaded in red wine, balsamic, olive oil, garlic, salt, pepper and juniper berries. Seared on a very hot barbeque grill, served medium rare with roasted yams. And a green salad on the side. It was delicious.
So tell us what does kangaroo meat taste like please.
OK all you throwing "your having pizza" in my face, come on you now who you are. I'm popping into each one's house so save me a piece please.
For dinner tonight I had what I call "chicken taco beans." Chopped onion, ground (in the food processor) chicken, black beans, pinto beans, kidney beans, picante sauce, broth, chopped parsley, 2 packages of taco seasoning. Looks like chili, but doesn't taste quite like chili -- probably because there's not a lot of chili seasoning or cumin.
When it's heated through, I add a liberal helping of ground flax seed, top with shredded cheese, and eat it with corn chips.
(Warms up great for work lunches, which is why I make a huge pot of it. Plus it's fast, cheap, and easy. Low fat, high fiber, high protein.)
I cooked part of the dinner and part came from the Publix deli. It was all good! Chicken fingers, baked beans, potato salad, cottage cheese and two bite cupcakes.
Diced beef steak with Rotel and bell pepper....Scalloped potatoes and asparagus!
