Tonight it's grillin time. I have fresh squids to grill, a mahi-mahi steak for me and a halibut filet for my wife. With these tasty fishes, I keep dressing at a minimum as I don't want to spoil it.
A touch of fresh lemon juice, little frrsh ground pepper, little salt, a drizzle of extra virgin after they are cooked and some fresh parsley on top.
And we'll make a salad with some greens we got a Wholefood this morning, two types of lettuce, dandelion, fresh cut spinach, a diced apple and cherry tomatoes.

This afternoon, I had wild mushroom agnolotti (it's sort of like ravioli, and they are stuffed with wild mushroom and garlic) with Prego tomato sauce, Texas cheese toast, and Italian meatballs.


And they're being washed down with an IBC root beer.

It's a very lazy day:

Pasta from a box
Sauce from a jar
Salad from a bag

The only non-lazy part, if you can even call it that, will be when I chop up some anchovies to put in MY portion of the pasta (my husband cringes at anchovies).

That last bit of exertion may call for ice cream for dessert.

I'm making my Memorial Day dinner tonight. We'll have leftovers tomorrow.

Homemade cole slaw with oil and pickle juice (pickle juice came from a poster here!)
Fresh sweet corn on the cob with butter and parm cheese
Baked beans made from scratch with ground beef
Beef brisket in bbq sauce
BBQ potato chips
White wine
Tecate Light beer

Another long day in the backyard finishing our dry bed,
Adding the beds, I think I've planted 60-70 perennials!
Well we are just about finished-just have to do mulch!

With today's work-tired so tonight is easy:
Hormel pork loin-honey/mustard
Alexia-Oven reds with olive oil,parmesan & roasted garlic

Lazy days before the trip...Got a Wal-Mart thin-crust double loaded pepperoni pizza take and bake(16")...added chopped red pepper, pineapple chunks, shredded cheddar, parmesan....For $8 and extras I need gone from frig...was really good

I got a Pork Roast on the Traeger. Basted with a marinade of Soy sauce, brown sugar, olive oil, garlic. Mmm! Pulled Pork sandwichs tonight!
