Definitely California. Being able to do snowboard/ski in the mountians and also surf in the Pacific all in the same day is great. Not to mention the Desert and Forest areas as well.
(I'm sure Califnornia's geographical size from North to South is the main reason for so much variety)
I love living in Arizona for this reason, you can be our riding your quads in the desert, and an hour later on top of a mountain surrounded by pine trees.
I don't think Florida has a lot of variety at all. Arizona does to some extent (when it comes to weather) but it doesn't offer a vibrant, large urban city (sorry, Phoenix doesn't cut it). California, New York, Pennsylvania, Ohio, Maryland, and New Jersey come to mind.
Maryland isn't called America in Miniture for Nothing. It pacts a GIGANTIC punch for such a mini state. Though, the more obvious ones would probably get the title for this thread
I definitely think California offers the most over all variety:
beaches
soaring mountains
super dry deserts
super lush forests
huge cities
agriculture
small towns
very hot weather
very cold weather
uber liberal politics
very conservative politics
...and everything in between

It is an underrated state, on those terms, along with Virginia in my opinion.
I'd say NY for the same reasons at the OP stated. We have mountains, beaches, NYC, small rural towns, mid sized cities, ethnic and racial diversity, Niagara Falls, the Adirondacks, Great Lakes, Hudson River Valley, Mohawk River Valley, Long Island, Finger Lakes, the Catskills, Long Island Sound, Lake Champlain, Lake Placid and the Tri-Lakes region, Atlantic coast, proximity to Canada, the Southern Tier and much more.
Also, for example, where I live is within 5-6 hours of NYC, Philly, Toronto, Montreal, Ottawa, Washington DC, Boston, Cleveland, Pittsburgh, Baltimore and if you push it a bit and go through Canada, Detroit too.
California. To give you an example, when you're in one of it's big cities, you can be in a zip code of many different ethnic groups, then drive up to another zip code up the road and there's mostly a single ethnic group. The counties of the state are also very different, some are urban and ghetto and others are rural and almost all-white, etc. It depends on where you go. The scenery of the state is also very diverse, some places are ugly or very nice like the the Sierra Nevada mountains.
