You'd trust strangers on the internet to tell you what to eat for breakfast because you "forgot" what you should eat for breakfast, but you won't trust a licensed medical professional whose credentials you can check out for yourself, with an actual appointment in person at his/her office, who can examine you personally, order and interpret your actual bloodwork from an actual laboratory. Again - that's pretty disturbing.

go to REI or Walmart. They sell dried eggs for camping. I've tried them and they're not bad actually. I sometimes put mustard on them.

I didn't read this whole thread, but some non meat lowish carb options besides eggs are:

nuts and seeds (breakfast for me is sometimes as simple as a handful of whole almonds and an apple)
tofu (great for scrambles)
plain Greek yogurt
And though not entirely low carb, chickpea flour (also called Besan flour) is great for making a non egg omelet. I mix 1/2 cup chickpea flour with spices such as cumin and basil leaves, and 1/2 cup water to make a batter, then pour it onto a nonstick pan or a pan with oil (I use coconut oil) and cook it like a pancake. As it starts to bubble, I add chopped leafy greens and various chopped veggies or homemade salsa to the top, then fold the pancake over. Cook a few more seconds on that side, flip and cook a few more seconds on the other side, and that's it. It has an eggy like flavor and is about 10 grams protein per 1/2 cup.
