I have had the same dishes for at least 20 years. Blue and white Blue Willow. I mix it with white ironstone. It’s classic and available, and when I needed to replace a few pieces it was easily done. Now I’m needing some replacements and I’ve decided to switch to something new.
I saw a pattern I like in the latest Home Decorators catalog and unless I find something I like more, I’ll ask Santa for it. Of course, I’ll want to see it and feel it in person first. Some China looks and feels cheap.
If you could throw out all your old dishes and start fresh, what would you pick?
Love them too. They are in the same feel but updated. I have blue and white everyday dinnerware that I love and it too, is a toile pattern.
Blue Willow is such an old traditional pattern, I share your love of it. It also reminds me of the old Franciscan ware patterns that were so popular way back then.

I don't think I would need to dream about them. If I decide that I want new dishes, I would just get them.
My personal preference for everyday dishes are plain white, everything else distracts from the beauty of the food on them. Plain white are also easy to replace, when a piece breaks or chips.
Interesting shape would be my preference too. That would be the only "extra" feature to please the eye.

I recently replaced my Dansk dinnerware white with a simple blue band - gave it to my son for his new apartment. I replaced it with plain white plates with a simple raised dot pattern on the border. I can change up salad plates or placemats for the season or according to my mood. While I can appreciate a lovely pattern, I'm not a fan of the look of food on an already "busy" plate pattern, and I tire of trying to match table decor to the same plates and colors time after time.

I do like white also, and would probably get white serving pieces to go with “Adelaide”. Really, I like what I guess you could call visual texture. I like the way Adelaide mixes up the patterns on each size plate, bowl and mug. Kind of like a patchwork quilt mixes up patterns. I’m not above using a mixture of dishes together either.
I guess I’d prefer a beautiful interesting table, rather than how the food looks on the plate.
I had some off-white stoneware and I got tired of how heavy (and huge) all the pieces were. Replaced it with a Corelle with a simple blue-grey thin band on it. We tend to use the 8.5" salad plates more than the dinner plates because they are just the right size for our meals.
