Are you talking about restaurants on the Strip, in hotels or not in hotels (casinos), gourmet, cheap eats, good off-Strip restaurants, ethnic, American, or what?
One thing that the 20 year invasion has given us to make up for ruining our town is that we now have a zillion good restaurants scattered all around the Valley, so that we don't have to fight the hordes of tourists on the Strip for a good meal with bad service, and high prices anymore. Good restaurants used to be hard to find in Las Vegas. Not any more.
Yes, I agree Buzz, but the tourists somehow find our best local restaurants in the most remote locations! Why are we divulging where they are!
Just kiddin', good food is good food, no matter where you are. And the most high priced restaurants, at least in my opinion, are usually not the best! Especially the ones in the hotels.
If tourists can travel to our neighborhood places, all the better for our local merchants. Here are some real local ones, not in hotels/casino's, most mentioned local to Las Vegas only.

My favorite thing at Taco Bell is the taco salad. They're coming out with new ones, so I think they'll be out Del Taco's taco salad. Does anyone know of restaurant here in town that makes a good one?

I agree with you on everything but the Hash House. I went there only once...but yuck!!! Haven't been to Paymons and never heard of Del Friscos. But I don't go to steakhouses much.
Bartolucci in Wynn is way good...you have to love fish though or it is a waste.
For steak we still like Flemings. It is a chain but they do know what they are doing.
For Mexican we like Zapata's on Craig where you can also watch the AF's finest. The flyboy's can't resist the lunch. Or Linda Michogan now in Centennial. Or the Burrito Inn at Del Webb in Sun City. Great food with mediocre service and been that way forever. We also like Frank & Finas but it is too far for us as a neighborhood joint.
For brfeakfast The Cracked Egg or original pancake house. The dutch baby is hard to beat.
Then you can go to Wolfgang Pucks cafeteria in the Spring Preserve. Moderate prices and some good stuff.
We enjoy Mon Ami Gabe in the Paris. Always sit on the patio and watch the tourists.
Around the NW we have Grape Street and Marche Bacchus...already mentioned by always good for a nice meal.
The Video Poker places often have very good food. We like our local Steiners which do a number of nice dishes including world class hamburgers.
Sushi local we use Sushi Ko. Nicely done generally. Nothing fancy but no bad fish. We also like Sushi Loca in Centennial though it is noisy. For traditional sushi Akasaka on Sahara. Pretty nice Korean a little further east - Shilla?
For fancy break the bank sushi - Nobu or any of the good sushi bars on the strip. We have a note to try Yellowtail.
Yes, Buzz, we all know that old joke. I'm surprised that In-n-Out keeps winning the RJ's readers poll for best burger. Kilroy's makes a much better burger, and it's local.
I've heard good things about Kilroy's, too, but haven't been there yet.
I went last night for the first time to Al's Garage in the District (Green Valley), and two in my party had burgers, which they said were excellent. Al's advertised a $3 burger night on Mondays, which would seem to be a great value.
