I would probably sell them on variety. Most other suburbs around the country are those generic cookie-cutter developments where everything's identical.
I know that alone is not enough to sell them on, but it is one of Long Islands strongest positives.
If you can afford it, its great. Good schools, easy train ride into the city, lots of great local restaurants, beaches. Depending on your field, higher salaries. I got a decent pay bump with a job in Westchester compared to WA state which almost covers the difference in COL. As for what stinks about LI, taxes, traffic, and having to pay a toll to leave the island. Property taxes starting at 1000/month and going up from there is absurd, but that's what you get when you have no industrial base from which to work from and high public employee salaries. Weather(for me at least) is pretty good, not a lot of snow, summers are humid but better than further inland and south.

Very true, the Island is the home of the Splanch which alone moves the Island up the variety food chain.
The same way I was recruited to move here. Dinner and a show in the city with the family. Followed the next day by a drive down the Meadowbrook, across ocean parkway. Stop at RM, walk the boardwalk to the lighthouse. Cross the causeway for dinner in Babylon VIllage and a train ride back to the city then home.
My wife loved it, so here we are 4 years later. Sell them on the contrasts of quiet ocean beaches and all of the city offerings.

That is a gorgeous ride. I like to take visitors over there too.
Do they like NYC? That's about the only reason to put up with this place. Nicer and cheaper suburbs can be found elsewhere in the country, but they don't have the greatest city in the world nearby.
