That's very easily done with a point-and-shoot. Just brace it with youe steering wheel and you can drive and shoot, no problems. With a DSLR it's a bit more tricky, hence the reason I haven't done this since my point-and-shoot days.
I'd much rather be on the road behind someone who is taking photos like this than someone talking on a cell phone, putting on makeup, or reading a magazine. |

I did that (point and shoot) while driving through west Texas. It's really not that hard. Actually got some really cool looking shots that way.
BTW, those were great pictures.
