For years we alternated travel between familys through the holidays. Now we have lost several siblings and family through the years. My mom is 87 and failing fast. Thanksgiving has mostly been scaled down to what I can make at home and reheat in the microwave at Mom's house.

I am sorry for your losses and having lost my mother I know how difficult this time must be for you. ((((((hugs))))) I too enjoy everyone's holiday memories.

I agree! Never heard of that. I make a pretty good pumpkin soup. Anything with pumpkin in it MUST be good!

I have been making the two ingredient pumpkin cupcakes for my kids school lunches lately. Have you tried these? You just get a box of cake mix any kind seems to work, mix it with a can of pumpkin (15.5 oz) and bake. 350, the time varies depending on the size. They work as cookies, cakes, muffins. No fat and adds veggies in a stealth way. I love it.

Just the dry mix with the pumpkin? That's great! It would be even more healthy if you mix it with a sugar free cake mix, or I might even attempt this with oatmeal muffin mix. That could actually create more of a pumpkin bread taste!

Spice cake mix seems to get raves. I've just done choc. and vanilla.

I made this today, and it's out of this world!

I used the spice cake, as Gen suggested. I mixed all the listed ingredients except for the oil, and substituted that with 1 cup of pumpkin, then baked per box instructions. After it cooled, I topped it with whipped cream cheese frosting. I can't even describe how moist and delicious this cake is!!! It's definitely a must try!
