Welp! 12 hours later after the original post - that about sums it up. Outside of sight seeing mountain after mountain after mountain...golf, casinos and shopping...not much.

Don't feel bad - most people who live here are still trying to figure this one out too.

You could go to Casino Arizona. They have 2 locations in Scottsdale. They have almost everything a Vegas casino has. You could go to see art in old town area. There are gallerys all in one area. You could eat, eat, eat. We have tons of good food. You could go shopping. Tons of it. You could site see. Go for a drive up north and look at the rocks up near Carefree. There aren't any amusement parks in Scottsdale. There are tons of resorts. If you want a massage/manicure/pedicure/facial, etc. we have some of the best in the world.
Here is also a great list of things to do:
Things to do in Scottsdale, AZ & Scottsdale Attractions - Yahoo! Travel

However make sure to call before you go as some places have closed for example: Out of Africa wildlife park (which was never in Scottsdale, btw) has moved out of town. Also, Rawhide has closed. (I think they relocated but am unsure as to if they have done so yet and where)
P.S. The page has 7 pages of things to do, so I am sure there will be something.
Have fun!

If you like architecture, you could visit Frank Lloyd Wright's Taliesin West in Scottsdale.

Depending on how you drive (if you drive like people here in Phoenix), it shouldn't even take you 4 hours. Sure you wouldn't rather go to Vegas? That's an easy 5 hour drive. Could always go down to Tombstone as well. Sedona is great if you just can't get enough of (yet more) scenery and you haven't gone brain dead yet.
