Since it’s August and crazy hot I would naturally recommend museums.
Heard Museum
Phoenix Art Museum
Arizona Science Center
Children’s Museum of Phoenix
Phoenix Police Museum
Arizona Museum of Natural History (In Mesa, so would be closer to Gilbert)
Scottsdale Museum of the West
Scottsdale Museum of Contemporary Art
Musical Instrument Museum

Also, you could go to an Arizona Diamondbacks game since the roof will be closed and air conditioned.

Check out the old town area of Gilbert. Postino’s is nice for dinner and wine. Joe’s BBQ is also over there. And a number of good places for brunch.

Thank you for responses. Thought there might be more tips thrown out there so didn't want to limit by interests.
Live music, breweries, water activities and just unique to the area things I suppose. From some research I've done looks like we (2 men,2 women mid 40's) might be taking a quick trip to Antelope Canyon (yes I'm aware this is not in Phoenix/Gilberts).
