Strawberry Earthquake Cake


1c. fresh strawberries
1-1/4 c. powdered sugar
1 box white cake mix- made according to pkg. directions.
1 c. shredded coconut
8 oz. cream cheese (softened)



Mix cake according to package instructions. Grease & flour 13X9 cake pan.
Layer approx. 1 c. of coconut on bottom of cake pan.
Pour 1/2 of the mixed cake batter over the coconut.
Cream together cream cheese & powdered sugar & 1 c. mashed fresh strawberries.
Drop cream cheese mixture in large dollops over cake batter.
Pour remaining cake batter over top of cream cheese mixture.
Bake 350* for 28-30 min. Do not over bake.
Sweetened fresh strawberries can be poured over top of cake when finished, if desired.

Sounds like a good summer dessert. But I'm having a hard time picturing what it would look like given its name.

Looks just like an earthquake cake only white instead of chocolate.
If you don't care for the looks of it, just put some cool whip on top of it.

Believe me it is very yummy..

I just made this for a friend's birthday party. It was a huge hit! Lots of compliments.

I have some notes, however:

I blended the strawberries, cream cheese, and powdered sugar with an immersion blender. It was really runny, so I ended up marbling the cream cheese mixture with the cake batter. It may not have been as runny if I had just mashed the strawberries, but I would have to try it again. To make it thicker, I guess I could have added more cream cheese.

The baking time was way low for my oven. I took me closer to an hour for it to bake all the way through in a 9x13" pan. I also made one in a springform pan, and that took over an hour to bake. It turned out okay, but was not as moist as the 9x13 cake. I think if I were to use a springform pan again, I'd turn down the temp to 300 or 325 and plan to bake longer.

For a whole cake, you might want closer to 2-3 cups of strawberries. 1 cup for the batter, and 1-2 for serving at the end.
