It's a method of cooking where you remove the backbone and butterfly the bird so it cooks faster, crisps up the skin and keeps the meat moist. In other words, a trifecta of winning.

Martha Stewart swears by spatchcocking and makes it look so easy, but she uses small birds. You need a really big pan, watch out.

Not a Martha fan. However, even a stopped clock is right twice a day. I think I have a good sized roasting pan. If not, the hardware store does. A roasting pan is handy piece of equipment for a kitchen.

I also want to work turkey into a more frequent rotation. Next decent day I'd also want to light the charcoal grill and grill a bird.

Deep frying turkey is good too, had one of those a couple of Thanksgiving's ago.

As a side note, I find it rather odd how all of the Indian casinos around here always have such a big spread for thanksgiving....

LOL, I guess they're laughing all the way to the bank these days.....

We just bought a smaller turkey breast in case we are unable to travel next week. That way we can have our own little feast here and if we have the neighbors over we won't have many leftovers.
The leftovers we do have don't last too long though because I will make Turkey Noodle Soup, Turkey and homemade noodles then we always have a couple sandwiches. Sometimes I grill them like a cheese toastie other times I don't.

It is 9:38 AM here and I am getting ready to brew my second cup of coffee for the day.
I've been busy and so not much coffee drinking so far.
