Working Thanksgiving day. Sounds like ham is on the menu. Then the plan is for turkey at home. I am thinking I will use the spatchcock method to cook the bird.

It's a method of cooking where you remove the backbone and butterfly the bird so it cooks faster, crisps up the skin and keeps the meat moist. In other words, a trifecta of winning.
Not a Martha fan. However, even a stopped clock is right twice a day. I think I have a good sized roasting pan. If not, the hardware store does. A roasting pan is handy piece of equipment for a kitchen.
I also want to work turkey into a more frequent rotation. Next decent day I'd also want to light the charcoal grill and grill a bird.
We just bought a smaller turkey breast in case we are unable to travel next week. That way we can have our own little feast here and if we have the neighbors over we won't have many leftovers.
The leftovers we do have don't last too long though because I will make Turkey Noodle Soup, Turkey and homemade noodles then we always have a couple sandwiches. Sometimes I grill them like a cheese toastie other times I don't.
If you like egg salad, SD, I have a recipe for egg salad with turkey and pickles in it that is super yummy. Good for leftovers.
