Obsidian,
You're mostly right about Mexican food in Seattle, but go to
Muy Macho Taqueria Y Senaduria
8515 14th Ave S
Seattle, WA 98108
Phone: (206) 763-3484
You'll be the only non Mexican eating there, prices are low, the food is good and the most authentic in Seattle.

There are a few decent Mexican places to go around the area, although it's not exactly a hotbed of great, authentic Mexican food. Then again, neither is Tampa.

The family from Jalisco that runs the local Torero chain does a pretty decent job of serving up reliable food, although I'm sure that they've done some Americanizing in their 25 years here.

My wife and I went to Wild Ginger a few weeks ago. The atmosphere was nice, but afterwards we were wondering if it was really worth the money we dropped there.

If you like burgers, you might try Red Mill burgers on Phinney Ridge. Big juicy burgers and good fries too. Show up early or you'll have to wait in line.

Two great 'taco trucks' on Rainier Avenue serve great, cheap real Mexican food ... one a little south of the old Chubby and Tubby and one at the corner of Graham. A link:

Having lived in Texas for 12 years I feel I know TexMex pretty well. Not a lot of options here compared to Austin where it's tough to decide between 12 totally awesome TexMex restaurants within a 1 miles radius...but here's my list in order.

Pesos
Acapulco Fresh (Issaquah location only)
Aqua Verde
Cactus

We also like Ooba's though it's not really TexMex and it is overpriced for what you get...but it is really good.

Passable is El Toreador in Redmond and if anyone ever raves about how awesome Las Margaritas is again, I think I might cry because I spent $65 hard earned dollars there one night and was wishing for a meal at Chipotle instead. Ditto for Taco Del Mar. UGH.

Basically I have traded TexMex/BBQ for Asian. Really hard to find good Asian in Texas and it is unstoppable here. When in Rome...

But I do miss my Chuys in Austin. Yum!!

Mama's has also been mentioned as good TexMex but I haven't been.
