Depends on what you categorize as "Beautiful landscapes". I love the central/west Texas landscapes more so than eastern Texas. I like Belton Lake, Inks Lake, Lyndon B Johnson, Canyon Lake, Buchanan Lake are all in central Texas and around Austin. They have clear water, tons of fossils and arrowheads to be found and very pleasant climate.

You forgot Lake Travis! Much deeper than Buchanan, a rocky bottom, and nice cliffs and bends.

For the OP though - Texas has many lakes. Some are large, such as Amistad and Livingston, but others much smaller (Inks Lake is quite small, but beautiful). The lakes near Houston are shallow and the water is not so clear. Some will be much better to enjoy via a boat.

Seconding Bulldawg82's list and adding Lake Texoma and Possum Kingdom lake. Possum Kingdom also has spots of clear water and rolling terrain. Lake Texoma has rolling terrain, but the water is not that clear.

Travis, LBJ, Canyon Lake, Medina, and Possum Kingdom are my personal favorites. Clear and surrounded by green rolling hills. To plug in a West Texas lake, Alan Henry is quite nice also.

Lake Travis by far! Any of the lakes in the Highland Lakes system west of Austin are nice really. Caddo Lake in East Texas is also very cool.

Lake O the Pines in East Texas and Caddo Lake is the only natural lake in Texas.
