I finally made it to Alfredo's Mexican Restaurant in Pecos!!
Here's the restaurant review:

ALFREDO’S MEXICAN RESTAURANT

THIS TEXAS MONTHLY MAGAZINE AWARD-WINNER FOR BEST MEXICAN FOOD IN PECOS, TEXAS

IS WITHOUT A DOUBT THE FINEST MEXICAN RESTAURANT IN THE TRANS-PECOS REGION OF FAR WEST TEXAS (PECOS, KERMIT, MONAHANS, FORT STOCKTON, MARFA, ALPINE, FORT DAVIS). THE BEEF ENCHILADA PLATE CAME WITH THIS INTRIGUING RED SAUCE, THE MEAT WAS VERY FLAVORFUL & THE SPANISH RICE HAD A UNIQUE TANGINESS. THE SYRUP IN MY FOUNTAIN DR. PEPPER WAS PROPERLY MIXED.

A SPECIAL SHOUT-OUT AND THANK YOU GOES OUT TO MY FRIEND ROB ALLEN. THE FURTHEST DUE WEST IN TEXAS HE HAD BEEN BEFORE THIS TRIP WAS SWEETWATER. I BOUGHT HIS CHICKEN QUESADILLA MEAL THAT HE ENOYED AND HE APPRECIATED MY SENTIMENT AND THE CHANCE TO HELP ME WITH WHAT I CALL A “PATENT PENDING” LUBBOCK TRIP, THAT IS, DRIVING FROM MCKINNEY TO PECOS TO HOBBS, NEW MEXICO TO LUBBOCK BECAUSE I FIND THAT BOTH THE NORTHERN ROUTE VIA DENTON AND THE SOUTHERN ROUTE VIA ABILENE AND SNYDER LACK PIZAZZ!!

TO MAKE THE 2ND & LAST PATENT PENDING LUBBOCK TRIP (WITH ME INVOLVED AND 1ST AND ONLY FOR HIM) IN HISTORY, ROB DROVE FROM HIS HUNTSVILLE, TEXAS APARTMENT TO MY HOME IN MCKINNEY TO ALFREDO’S IN PECOS TO HOBBS, NEW MEXICO TO LUBBOCK TO MCKINNEY TO HUNTSVILLE WITH SOME WRONG TURNS SPRINKLED IN SO WHAT WAS SUPPOSED TO BE 1,452 MILES IN 2 DAYS ENDED UP BEING 1,556 MILES IN 2 DAYS DRIVEN BY ROB ALONE. ROBERT EDWARD LEE ALLEN IS A GREAT FRIEND AND AN AMERICAN HERO!!

That's until you make your Lubbock trip, where you need to stop by Ruby Tequila's over by Texas Tech (N University @ Mac Davis Lane). It may be a small chain, but they use fresh ingredients and use no microwaves. My visit there not too long ago was incredible, so be sure to stop by there when you get to it.

Glad you had fun in Pecos.

Thanks Case44, I've been to Ruby Tequila's a handful of times--(it's great too!!) during my Senior year at Texas Tech (Fall 2004). I grad. TX TECH Class of May 2005 B.S. Human Dev. & Fam. Studies.
