I've been to Wisconsin twice and loved the state. Can't say enough about how beautiful it was, friendly people, etc.

I must have missed experienced one great food experience though that I've read about on here--cheese curds. What are those exactly? Sorry if this is a dumb question.

Generally you curdle cheese while it's still in a gelatinous form and it soidifies and makes little chunks that squeak in your mouth.

I hope you stopped at the Mars Cheese Castle in Kenosha!

Cheese Curds are probably one of the best things in life!!!!! It is just really good cheese in bite size format that is extremely fresh, you will enjoy I gaurantee it!!!!

Geez Matt...that's kind of a gross description! "curdle"??? "gelatinous"?? And I'm not real sure what "soidifies" means, but it doesn't sound appetizing! Luckily this is not completely accurate. All cheese starts as milk, we all know that. Then, once the rennett is added, the MILK begins to curdle and is stirred to begin the process where it turns to cheese. Cheese curds are simply "young" cheese, it wasn't allowed to sit long enough to finish the process and become cheese. The longer cheese sits the harder it gets. That's why the older a cheese is, the harder it is. Hence cheese curds are soft, SHOULD be still "squeaky" when you eat them, and may still have some of the liquid (whey) which is drained off as cheese ages, in the bag with them. BTW, don't refrigerate your cheese curds, or they'll lose their "squeak".

I work in a deli and cheese curds are thr biggest seller over anything else. The best form of cheese ever!
