- 4-302.14 - --REPEAT: Upon speaking with the owner on the phone, he indicated they do not have test strips available. he has said previously that they would use bleach to sanitize their dishes. He indicated today that they are just washing dishes normally and did not include a sanitizing step in his description of dish washing. Reminded him that he previously indicated they would use bleach to sanitize and that he needs to be sure he is doing so and that he has test strips to verify his sanitizer concentration.
- 4-102.11(B)(1) - --In the deep freezer on the retail floor there are two plastic bags of corn centers and a bag of of fresh herbs. In the freezer above the refrigerator in the cooking area there are corn husks for wrapping food stored in plastic bags. In the cooler in the kitchen area there are plantains in plastic bags. The bags are plastic "Thank You" grocery bags. The food products are in direct contact with the plastic of the bags.
- KDA_4_10111A - --REPEAT: In the front of the store there are two sterilite containers being used to store bread. These containers have no markings indicating they are approved for direct contact with food. The manufacturer's label on the containers that has not been removed has a picture of the containers being used to store clothes. The breads are in direct contact with the plastics of these containers.
- KDA_4_60111A - --REPEAT: On a table in the front there are two containers of bread for sale. These containers have stickers on the outside of the containers. The stickers were identified as remaining from the original manufacturer's labeling of the container prior to purchasing. The containers have been cleaned since being purchased, but the stickers were not removed during the cleaning process. On a table in the kitchen there is a container with sticker residue from the original manufacturing labeling. The container is being stored as clean.
- KDA_7_20111B - --REPEAT: In the kitchen the liquid hand soap for the hand sink is sitting on the rack of clean dishes next to the sink. The soap is directly above clean cutting boards and a clean stainless steel pot.
- KDA_7_30111B - --REPEAT: On the retail shelf there is liquid hand soap and bottles of AJAX cleaner being stored on shelves directly above bottles of Salsa. On the retail shelf there are bottles of Saville Shampoo and bottles of Body Lotion being stored directly above Tamarid Pulp Candy and bags of candy. On the retail shelf there are bottles of Hydrogen Peroxide and Isopropyl Alcohol being stored directly above bottles of Vanilla Liquor.
- KDA_Defacto - --The owner is not able to be present for today's inspection due to family in the hospital. The employee present is not fluent in English and called the owner for translations. We have called the owner to speak to him about today's violations, but correction on site has not been accomplished.

- KDA_4_60111A - Food Contact Clean to Sight and Touch - EQUIPMENT FOOD-CONTACT SURFACES and UTENSILS shall be clean to sight and touch.
